Pavel Kalac

Professor Kalac has been researching Edible Mushroom chemistry for over 40 years and has been publishing reviews and articles on the topic in the 1990´s. Encouraged by the citations of researchers studying related topics, Pavel Kalac is excited to share all of the gathered knowledge on the topic of edible mushroom chemistry together in this well-cited scientific reference. Graduated in the Institute of Chemical Technology, Faculty of Food and Biochemical Technology, Prague (1965). At the recent workplace since 1971; associate professor (1983) and professor in agricultural chemistry (1999). Publications: 60 in the Web of Science, including 36 articles and reviews in Elsevier journals (particularly in Food Chemistry (19) and Meat Science (8)). Sum of times cited without self-citations 1680 (Web of Science), h-index 21. Biologically active natural compounds, both desirable and detrimental for human health, at an interface agriculture / food have been topic of my professional interest and teaching for decades. Expanding information particularly during the last decade encouraged my idea to collect recent knowledge in a book.
